At twelve years old, Claudio Savini began helping his father as a truffle hunter.  They supplied restaurants in Milan and Florence with fresh white and black truffles. In 1987 Claudio established Savitar s.r.l., supplying the top restaurants around the world with fresh truffles and truffle products.  His customers include Giorgio Baldi in Los Angeles, and Le Cirque, Del Posto and the Four Seasons Restaurants in New York.

 

San Miniato, Tuscany, is considered the best area in Italy for the highest quality truffles.  In 1954, President Truman was presented with the largest white truffle found in modern history.  The five and a half pound white truffle came from San Miniato.

 

We discovered Claudio at the CIBUS food exposition in Parma last spring.  He is eager for Olive Tree to present the Savitar retail line of truffle products to the top gourmet stores in the US.  We are proud to be representing this impeccable line of products.

 

The restaurants and hotels are especially fond of the Truffle Sauce.  Chefs often use it as a rub for roasting veal or beef.  It is also great simply spread on warm toasted Ciabatta bread, or tossed with roasted cauliflower as an ultra-impressive side dish.
